I’m a big fan of ‘simple’. Simple implies; hard to do wrong, quick and few ingredients. But for me, as the ‘pro’ I need to find a balance between simplicity and creating spectacular food that someone would, perhaps, not cook for themselves.
Starters are a great way to do this, not a great number of people make a starter every night, nibbles, perhaps, pudding possibly but starter, less likely.
The starter pictured has to be one of my favourites. A lot of fish mongers sell lagoustines ready cooked and served with a little homemade mayo, bread and butter and lemon it has to be the perfect balance between simple and impressive.
