Nibbles are always fun to do. They are a fantastic way to use up bits that are left over from other things, they look pretty, are exciting to eat and, if you get it just right people say ‘oooo’ when you reveal them.
These little guys in particular tend to be a favourite, especially if you can find nice salmon. The blinis are basically just mini pancakes with extra baking powder, cream cheese, and then your roll of smoked fish. Garnish essential; either dill or two crossed over chives. I also always dribble the salmon with a little lemon and black pepper.
