Pesto Palmiers

It is often considered a rather Christmassy nibble type but I find it goes down well all year round. As long as you have puff pastry and pesto its really very simple. The great thing about pesto, as well, is that you can usually find a half-open jar of it somewhere, or as in this case you can make many uses of it, we had a vegetarian who had salmon baked with pesto the evening before and children’s supper the next night; pesto and pasta. Before you know it your 70p jar of pesto has gone a long way and made everybody happy in doing so.

Palmiers are simple; cut the pastry into wide strips and spread with pesto, then role in the two edges so that they meet in the middle, place on a baking tray and bake until the pastry is cooked and the palmiers are bigger than how they started!
