and thats really saying something because usually the ferrets will eat only raw meat, rabbit for preferance but beef or chicken will do.
This is one of those recpies that I have no recollection of ever reading in a book, or ever even learning to cook, I build all my soups up the same way and they usually turn out very edible, especially on a day like today. People love to find a flask of soup in their pic-nic if they’ve been out fishing.
To start with a soup base is required. Chop (very roughly because its going to be blended later anyway) 1 onion, 1 leek, 2 sticks of celery and a carrot. (In reality if you are missing one of these four it’s not the end of the world, as long as you have three of them, also adjust quantity accordingly). Then add to a pan and sweat until soft. Pour in stock, I never measure just enough to cover and then a bit more, and then add a chopped butternut squash and allow to simmer for about 15 mins. Blend. Season. Add a wee splash of double cream and serve.
A positive favourite.
